Strawberry Fudge

To me, the word fudge, automatically says sweetness overload. 
So here’s a healthy fudge idea that’s yummy and easy:  

VEGAN STRAWBERRY FREEZER FUDGE

INSTRUCTIONS 
1. In blender, add 2 cups of frozen strawberries, 1/2 c almond butter, 1/3 c melted coconut oil and 2 TB maple syrup and blend until smooth

2. Spread mixture into 9-inch square parchment lined pan

3. Top with fresh strawberry slices and sprinkle with shredded coconut

4. Pop in freezer overnight and Voila!

Enjoy immediately or keep in sealed container in freezer.

INGREDIENTS

  • 2 C Frozen strawberries
  • 1/2 c   Almond butter
  • 1/3 c   Melted coconut oil
  • 2TB    Maple syrup

Candied Rum Mac Nuts

Candied Rum Macadamia Nuts
INGREDIENTS
  • 2 cups whole macadamia nuts, lightly roasted
Spice Mix:
  • 2 tablespoons granulated sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground allspice
Rum Glaze:
  • 2 tablespoons Kōloa Kaua’i Cacao Rum
  • 2 teaspoons vanilla extract
  • 1 teaspoon brown sugar
  • 1 teaspoon unsalted butter

METHOD
  • Line a baking sheet with parchment paper.
  • To make the spice mix, place the spices in a small bowl and mix to combine.
  • To make the glaze, place the glaze ingredients in a medium-size saucepan and bring to a boil over medium heat.
  • Add the macadamia nuts to the saucepan and cook until they are well coated and the pan is almost dry, about 1 minute. Spoon the spice mix over the nuts, 1 tablespoon at a time, until they are well coated.
  • Transfer the macadamia nuts to the prepared sheet, separate with your hands or a fork, and let sit until completely dried, at least 1 hour and up to overnight.

Loco Moco Recipe

Hamburger Patties
8oz ground beef
1 tsp salt
1/2 tsp garlic powder
1/4 tsp black pepper
1 egg

Gravy
4 tblspns unsalted butter
2 cloves of garlic
4oz of mushrooms thinly sliced
1 1/2 cups of chicken, vegetable or mushroom stock
2 tblspns flour

2 large eggs
1 1/2 cups rice

Instructions:
  • Place ground beef, deshelled egg, salt, garlic powder, and black pepper into a mixing bowl and mix together. Form 2 even (4 ounce) patties and lightly season each side with salt and pepper.
  • Sear or grill burger patties for 3 to 4 minutes on each side. Reduce heat to medium and continue to cook burgers until medium doneness, an additional 3 to 4 minutes.
  • Add 2 tablespoons butter to a saucepan and place over medium-high heat. Add garlic and mushrooms and sauté for about 3 minutes or until mushrooms are lightly caramelized. Season with salt and pepper. Melt remaining butter into the mixture, sprinkle with flour to thicken if needed and stir together. Lower heat to medium and stir in stock. ​
  • Place hamburger patty on top of a generous scoop of rice, lay gravy over the patty and rice, then top with an egg. You can also add sausage, bacon or spam to the rice to add flavor.

Aloha Shoyu Chicken (Aloha Shoyu)

INGREDIENTS
5 lbs chicken thighs, boneless
3 c Aloha Regular Soy Sauce or Aloha Lower Salt Soy Sauce
5 c chicken broth
1 T garlic, minced
1 1/2 T spoon ginger, minced*
1/2 c sake or beer
1 c sugar
1 t black pepper
PROCEDURE
Combine all ingredients in a large pot. Bring contents of pot to a boil and lower to a simmer for duration of cooking process. Cook until chicken is tender; about 30—45 minutes.
* 1/2 T powdered ginger can be substituted

Pineapple Cranberry Relish (Olena Heu)

​Ingredients:
1 can of jellied cranberries 
1/2 cup of dried cranberries
1 can of crushed pineapples
1 cup of walnuts, can substitute with macadamia nuts
1 orange peel

Pour out the can of chilled crushed pineapple into a large bowl, save the liquid from the can. 
Place the dried cranberries in a pan on medium heat and reconstitute the dried cranberries with the pineapple juice. You can add water if needed. Sautee until plump and soft.

Chop the nuts into halves or quarters (based on how chunky you'd like it) and place into the large bowl with the crushed pineapples. Mix.
Place chilled cranberry jelly in the large bowl. Mix.
Squeeze an orange peel atop the bowl once everything is mixed for slight flavor of orange zest.

Lemon Cookie Recipe (Keaka Lee)

INGREDIENTS
5oz Unsalted Butter (room temp)
6oz Powdered Sugar
1tblsp Lemon Juice
2tblsp Lemon Zest
1tsp Vanilla Extract
1 Large Egg (room temp)
5oz All Purpose Flour
1/2tsp Baking Soda
1/2tsp Kosher Salt

PROCESS
Preheat the over to 350F. Line baking sheets with wax/parchment paper.
In a mixing bowl add butter, sugar and lemon zest whisk until light and fluffy.
Add the lemon juice, vanilla extract and egg then whisk until incorporated.
Add salt, baking soda and flour then mix until incorporated.
Use tablespoon to scoop the cookies onto the baking sheets, leaving 2" between the cookies.
​Bake for 10min or until edges are golden.
